The basic glycemic index is a scale that ranks carbohydrate foods by how much they raise the blood sugar levels in the body compared to white bread. When eating food that contains carbohydrates, the sugar from the food breaks down during digestion and gives you energy. The glycemic index measures the rate that the food raises your blood sugar level during this process.

Your glycemic index book will give you food plans for overall nutrition, including minerals, vitamins and fiber. Your book will explain why choosing a food with a high GI is all right if you eat it with a food that is a low GI. The glycemic index book will explain that processed foods have little nutrition and a lot of hidden carbohydrates in them.
